Easy Banana Ice-cream

I’m chucking this up now because, despite the cold weather here in Melbourne, I made this last night. It’s delicious, easy, dairy free, gluten Free, hassle free, vegan, quick and easy. Also it’s real food! 

Items needed:
Stick mixer or Mini Chopper
2 Bananas – frozen
1/4 cup water/coconut milk
1 tsp pure cocao powder
2 tsp maple syrup
Now the worst part of this recipe is knowing if you have frozen bananas on hand. Personally I am in the habit of peeling and putting the super ripe bananas, broken into 3 pieces, into a specific container in the freezer. With a toddler in the house bananas are a staple and we commonly have more than we need as his appetite fluctuates, so freezing them is a fantastic way to save the bananas from the compost or our chooks (they can have the potassium rich peels anyway!).

If you didn’t do it before freezing break the bananas into more manageable sized pieces and blend with all ingredients, until it looks a bit like ice cream.

Could actually be enough for two but…. not in my case , hahaha.
Eat straight out of the processor if you don’t care much (in my case I removed the blade first!) or serve in the normal way non lazy types serve ice-cream. In my defense dishes use water and here in Australia water will always be at a premium… seriously why create more dishes??
Quick, easy, low dishes! Only preparation was putting peeled over ripe bananas in the freezer months ago… Yesss!
